In order to change the language of Folder Time Update, download the appropriate language zip file, extract the 'foldertimeupdate_lng.ini', and put it in the same folder that you Installed Folder Time Update utility.
Nevertheless, the image information in the lighttable view of darktable still shows the original (wrong) datetime. In the case where you have image edits that you don't want to lose, you'll need to create sidecar files for the image files (if you don't have this enabled by default in settings), then remove the images from within darktable, perform the datetime change on the files, re-import the files into darktable.
